BEGINNING

Since 2013, Tikua has been preserving and reimagining the flavors of Mexico’s southeast with authentic ingredients, inherited recipes, and a clear mission: to keep our roots alive… and delicious.

Our story began in February 2013 with the mission to seek out, preserve, and share some of the oldest and most original ingredients from southeastern kitchens—like the bitter lime of Oxkutzcab, Yucatán; the Chilhuacle and Achilito chiles from the Oaxacan town of Cuicatlán; and the pre-Hispanic tradition of the extraordinary flavors that come from insects. Guided by Britto Galán, a native of the southeast, and the family recipes passed down through generations of grinding stones, pots, and pans, Tikua Sureste was born.

In an 1830 colonial house in the heart of Querétaro, Tikua is more than a restaurant—it’s a journey through the history, art, and cuisine of Mexico’s southeast.

Housed in an old colonial home from 1830 in the historic center of Querétaro—known as “La Casa de los 3 Patios” and located right across from the San Agustín Temple—we invite you to wander through the main patio and admire our unique mural “Women and the Cuisine of the Southeast.” Dine with us while you take in this magnificent Oaxacan artwork that guides you through history: from the Spanish conquest to the blending of ethnicities and flavors that gave rise to the incredible cuisine of Mexico’s southeast. This culinary heritage has been recognized by UNESCO as Intangible Cultural Heritage of Humanity since 2010. With the arrival of new ingredients, prepared in ancient ways and blended with local spices and elements, a perfect fusion was born—the foundation of the cuisine of Yucatán, Campeche, Chiapas, and Oaxaca.
